Tasting Notes: The liquor is pale yellowish-green, with an aroma that is floral and vegetal. The flavor is like fresh collard greens, with floral notes, an earthy mineral quality, and coating mouthfeel. Astringency is moderate and pleasant.
Origin: Fujian Province, China
How to prepare it: We start with a quick wash, swirling in steeping temperature water for 10-15 seconds, and then move the leaves to our brewing vessel. Steep about 1 tsp. per cup, at 195 degrees, for 2-3 minutes. Allow it a good bit of room to open up. This tea is good for multiple infusions.
